A blend from various plots in Marsannay, some with gravelly soil, a large portion of which is very limestone-rich. Spontaneous fermentation occurs in used barrels, barriques, and demi-muids, all minimally or not toasted at all, which is very important to Sylvain. The nose is characterized by notes of white fruit, somewhat subdued, giving the impression that the wine is unfiltered. It displays subtle fruitiness, with light hints of kiwi and white peach. There’s a predominant presence of seashell and smoke, accompanied by earthy spice. The palate is energetic, mouth-wateringly salty, followed by a powerful surge of stony tannins in the finish. Elegant and wild simultaneously, it’s astonishing, something that only Pataille can achieve.
